Mince Pie Espresso Martini
Ingredients
25ml Golden or Spiced Rum
25ml Kahlua or Coffee Liqueur
25ml Frangelico or Hazelnut Liqueur
25ml Hot water
1 Teaspoon instant coffee
1 Teaspoon sugar
2 heaped teaspoons of mincemeat (mince pie filling)
Ice
Method
1. Mix the instant coffee and sugar with the hot water until dissolved and add to your cocktail shaker
2. Add the rum, coffee and hazelnut liqueurs to your cocktail shaker
3. Add the mincemeat
4. Muddle or vigorously mix all ingredients together
5. Top your shaker with ice and shake hard for a minute
6. Strain into a martini glass (or a short glass) and ENJOY!
Swap out the instant coffee for a shot of espresso if you have a fancy pants coffee machine at home.
Also, try adding mincemeat to your bottle of rum and infusing for at least a week (the more you add to the bottle the faster it will infuse). This way you can pour 'mince pie infused rum' and skip the teaspoons of mincemeat from the mix. You can use your infused rum in a variety of other drinks to add a festive twist - daiquiris, rum and ginger or even just your cup of coffee. Go on, it's Christmaaaaas!!
